This is turning into my favorite meal. As you may have read in a previous post, I like chicken caesar salads. The best recipe I’ve found so far is Jamie Oliver’s Proper Chicken Caesar, from his “At home with…” cookbook. Probably the most unique aspect is that you bake the chicken as it lays on top of crusty bread chunks, so that the juices, olive oil and rosemary flavor the croutons to perfection.

Next step is to fry up some bacon, recipe calls to place it on the chicken as it cooks, but I like to fry it with rosemary and add it to the dressing. The dressing consists of lemon juice, anchovies, garlic, grated parmesan cheese, olive oil and sour cream.

Wash and dry some romaine lettuce and set aside to await the goodness.

Once the chicken is done, shred or rustic cut it and place it on top of your romaine.

now you are ready to add the croutons and the awesomeness that is this dressing.

Give it all a good stirring and you are ready to plate and enjoy this easy, rustic and delicious salad. Once plated add some shavings of the parmesan. We usually have this as our meal, with nothing else and it always satisfies fully.

Unlike some salads this usually will keep to have the next day for lunch or a snack!
