Siduri Family Vineyards: Focus on Pinot Noirs

Instructor: Adam Lee, Winemaker, Siduri & Novy Family Wines
Join us for a non-traditional cooking class in which you’ll learn all about these delicious wines made by two former Texas residents. Adam Lee and his wife left the Lone Star State in 1994 with the dream of creating fine wines made from Pinot Noir grapes. From their base in Santa Rosa in Sonoma County, they now produce over 25 different pinots each year, from grapes grown in the coastal regions of California and the Willamette Valley of Oregon. You’ll also enjoy wines from a second label, Novy Family Wines, that are consistent favorites with critics and consumers alike.
(PLANO, FRIDAY, JULY 11TH, 6:30 P.M.)

Big, Fun, and Exceptional: Pahlmeyer Wine Dinner

Magnificent terroir, winemaking soul, and masterwork fill each bottle of Pahlmeyer wine. Critics agree that vintage after vintage, Pahlmeyer wines continue to produce phenomenal wines of power and finesse. As the winemaker introduces you to these gems, you’ll sample small plates that will perfectly complement the wines. Our Cooking School Staff will show you how to create dishes as you learn more about pairing food and wine to bring out the best flavor in both. (DALLAS LOVERS LN, WED., JULY 9TH, 6:30 P.M.)

An Evening with Dave Phinney

Instructor: David Phinney, Orin Swift Cellars and the CM Cooking School Staff
Dave Phinney has a long history of making high end wines in the Napa Valley that includes time spend with Opus One, Whitehall and Mondavi. He started Orin Swift Cellars as a small, part-time venture while he worked at other wineries and named it as a tribute to his parents. Needless to say, his time is now spent making his own wines which have been well received by both the critics and the public. Join us for a delightful evening as you learn about how this small venture became so acclaimed; discover more about the wines and the grapes that go into them; and enjoying a lesson in food and wine pairing.
(DALLAS LOVERS LN., THURS., JULY 1OTH, 6:30 P.M.; FORT WORTH, JULY 11TH, 6:30 P.M.)

Trefethen Family Vineyards Wine Dinner

Instructor: Zeke Neeley, Winemaker and the Central Market Cooking School Staff
One Family. One Estate. One Passion. Since the late 1960’s, the Trefethen family who founded the vineyards has been committed to estate production; they are adamant that they should be the ones growing the grapes and turning them into wine. Their passion requires it. The winery produces a diverse range of award-winning varietal, blended and reserve wines – all from their Napa Valley estate – that exhibit the classic hallmarks of fine wines: richness with elegance, concentration with finesse, complexity with harmony and sophistication with approachability. Spend an evening with the winemaker, learning about the family; the techniques and terroir; the tradition, and enjoy a succession of small plates.
(DALLAS LOVERS LN, FRI., JULY 11TH, 6:30 P.M.; FORT WORTH, SAT., JULY 12TH, 6:30 P.M.)

Only indigenous yeasts are used with a mix of traditional and cutting-edge winemaking techniques, resulting in estate-grown, sustainably farmed wines that over deliver on flavor and value. Join the winemaker as he leads you through a feast of authentic Argentine dishes paired with the wines that Argentines enjoy. Our Cooking School Staff will show you how to make each of these dishes as Héctor introduces you to his wines.
