Coconut is everywhere these days; coconut flour, coconut sugar, coconut oil, etc. It can be a little overwhelming when trying to decide what to do with it all. There, there my little chickpea. I have for you now 200 gluten-free, grain-free, nut-free vegan recipes using everything lovely to do with coconuts, all contained within one tablet-sized cookbook called The Complete Coconut Cookbook. Okay, more like the size of a first generation tablet, but still, ever so helpful in tackling the trendy coconut.

The book starts off much like a textbook, with lots and lots of paragraphs that will teach you everything from health benefits, staple pantry items, how to measure ingredients and common nutrition terms. You would definitely look cool reading this book.

When you’re ready to attempt the food, the author has you covered from morning to night. It’s hard to believe coconut is really this versatile. There are recipes for breakfast, salads, soups and chilis, cookies and cakes, breads and beverages. Throughout the book are full color images that really make you believe that you could make this crazy sounding coconut recipe. My mouth was watering at the idea of feasting on Moroccan Sweet Potato, Butter Bean and Coconut Tagine, and Green Thai Curry with Spinach and Sweet Potatoes (I like sweet potatoes, okay.) A Tofu Scramble with mushrooms and Peppers for breakfast, a Pumpkin Pie Shake and Vanilla Coconut Baked Doughnuts for dessert. Ugh, just shovel it in already. I almost forgot that this was supposed to be healthy. That it IS healthy.

I did actually attempt a few of the easier recipes, only because I work full time, am saddened by my lack of free time to experiment with cooking, other excuses, etc. I basically made peanut butter cookies but with sunflower seed butter, complete with the crisscross of a fork, and then added my own touch of a chocolate center. They were pretty tasty, and my dog liked them, too (sans chocolate of course.)
