Thirsty Lion Gastropub in Irving, TX (Toyota Music Factory area) is becoming one of my favorite food spots in the DFW. Not only are the food and service consistent, the menu is also filled with dishes that are a mix of familiar and imaginative.

Thirsty Lion currently has a summer menu that’s bursting with freshness and flavor, your tastebuds will think they’re on vacation!

The Pork Belly Street Tacos has an Asian flair to it, and I love that it comes with corn tortillas!

The Spicy Shrimp Ceviche was fresh and perfect! Some ceviche can be too acidic but this one was just right.

This Fresh Heirloom Tomato Salad would have to be my favorite starter from the summer menu! That maple balsamic glaze was the perfect touch.

White Wine Sangria was also my favorite summer drink from the menu!

The Tennessee Honey cocktail — perfect especially if you love honey!

The rasperry mule-jito is the perfect lovechild of raspebbries, a moscow mule, and a mojito. Perfect for the sunny weather!

This is honestly one of the most amazing burgers I’ve ever tried– and it’s MEATLESS! Yes, it’s the Impossible Burger (soy and plant patty), served “Cali style.” I am craving it again… BADLY!

Cedar Plank Roasted Salmon! I mean, look at those fresh veggies!

Need a light summer pasta? The Seared Shrimp and Heirloom Tomato Linguini is the dish for you!

Please, please, PLEASE make room for the Strawberry Rhubarb & White Chocolate Cheesecake. The CRUST, guys. It’s Chocolate hazelnut!

If you haven’t tried out Thirsty Lion Gastropub, you will have to because I have yet to hear anyone be disappointed every time I recommend this place. And that Impossible Burger speaks for itself. I, too, thought it was impossible to crave a meatless burger yet here I am feeling the urge to come back before the summer menu is gone. So make sure you do your tastebuds a favor and stop by ASAP!
