So many amazing new spots are starting to pop up at Toyota Music Factory, and Grimaldi’s Pizzeria is its newest addition. It seems to be a favorite around the DFW location and boy am I glad they found a home in the Las Colinas area. I tried Grimaldi’s for the first time last week at the media dinner preview and I was BEYOND impressed.

They have a signature wine called the Mille Gradi, which is a robust red wine that pairs well with a lot of their menu items (yep, including their pizzas!)


They have several salad options, including the mediterranean salad (top) and this seasonal salad (bottom), which was HEAVENLY. Spinach + candied pecans + cranberries + feta cheese = HEAVEN.

The Don is one of their popular pizzas, and it includes meatballs, pepperoni, and fresh, hand-pinched sausage. They like to add the sausage raw and allow it to cook in their coal-fired brick ovens so the juices leave on some of that moisture and flavor. It was soooo delicious! I also tried their gluten free crust (made with brown rice flour with a touch of butter) which was impressively tasty. Most pizza places have disappointing gluten-free crusts but Grimaldi’s was a lot like the real thing! You can also create your own pizza and add on sauces/toppings that satisfy your taste buds.

If you can– and I know it’s hard– leave some room for dessert. Listen closely when I tell you this: DO. NOT. SLEEP. ON. THE. BUTTERSCOTCH. TOFFEE. CHEESECAKE! It’s been a week since this dinner and I’ve thought about this cheesecake about 12 times already. 13. Treat yourself!

Grimaldi’s Pizzeria at Toyota Music Factory is located at 300 W. Las Colinas Blvd., Irving TX 75039.  Hours of operation are Sunday through Thursday 11 a.m. to 10 p.m., and Friday through Saturday 11 a.m. to 11 p.m.
