The Cuellar family, who brought us El Chico, debuted a new concept in Plano this season that’ll have your mouth watering in no time. Cuellars’ Fajita Ranch brings us “Ranch-Mex” dining, like Texas ranch cuisine served in a Hill Country atmosphere. This blend of Texas ranch food and Tex-Mex lets guests pair both types of cuisines in a unique way. Think, cheese enchiladas with a side of mashed potatoes, steak fries with your fajitas, queso drizzled on your chicken fried steak. Hungry yet??

The restaurant has a full bar, large patio seating and a private room, in addition to the regular dining space. The colorful paintings and family photos show the story of the legendary Ceullar family throughout the restaurant.

My friend and I began our meal with chips and queso (because I’m obsessed with it) and seasonal margaritas. The queso brings a unique flavor with creamy cheese and a hint of chili. Margaritas are available in several different flavors — all of which are refreshing and strong. Below, you’ll see the Texas Twister (a blend of margarita and sangria) and the sweet and savory Peach marg (to the very right).

One of the appetizers you won’t find elsewhere is the White Wings — juicy chicken breasts stuffed with jalapenos and jack cheese and then wrapped in bacon. Is that Texan enough for ya?

For lunch or dinner, your Ranch-Mex options await. I was surprised (and excited) to learn about: the Texas Eggroll (chimichanga with chicken fajitas), brisket quesadillas, the Ranch Burger, and of course, fajitas! I ordered a combo fajita plate with beef and chicken, and every plate comes with two sides. I got the best of both worlds with steak fries and chicken tortilla soup.

And by the way, I haven’t seen so many options for a fajita! You can choose from a number of options: beef, chicken, combo (pick 2: beef, chicken or pork), pork, ribeye, pork ribs, BBQ chicken, chipotle chicklen, tilapia, mushroom or shrimp wrapped in bacon.

Don’t forget dessert. The must-have churros can do you no wrong.

Cuellars’ Fajita Ranch is located at 3310 North Central Expressway (at Parker) in Plano, Texas, 75074, 972-905-5638. The restaurant is open Tuesday through Thursday 5 p.m.-10 p.m, Friday-Saturday, 11 a.m. to 10 p.m. and Sundays 11 a.m. to 9 p.m.
