Bacon Guacamole

This recipe originally appeared on Adventures in Cooking.

  • 10 Small Ripe Avocados, peeled and pitted, with one pit reserved on the side
  • 6 Quality Bacon Slices (any smoked variety is tastiest), pan fried until crispy and then finely chopped
  • 6 Garlic Cloves, minced
  • 2 Medium Tomatoes, coarsely chopped
  • 1 Medium White Onion, coarsely chopped
  • 2 Jalepenos
  • 1 Teaspoon Fresh Cilantro, finely chopped
  • 3 Tablespoons Lemon Juice
  • Salt & Pepper

Using a gas stove top, place the jalapenos on a long grilling fork and roast over the open flame. The skin of the jalepeno will blacken and bubble within a minute, once this happens turn the peppers over and roast them for another minute on the other side. Place the jalapenos in a plastic bag, seal it, and allow to steam in the plastic baggie for about 5-7 minutes. Remove the jalapenos from the bag, chop them finely, and set aside.

Place the avocados in a large bowl and mash them with a large fork until the avocados have mostly combined together but there are still large chunks of them. Now mix in the lemon juice, cilantro, jalepenos, onions, tomatoes, garlic and bacon. Season with salt and pepper to taste. Add more lemon juice if you’d like as well. Serve cold with tortilla chips.

Meatball Recipe from local Chef Kenny Bowers

(chef/owner at Kenny’s Wood Fired Grill, Kenny’s Italian Kitchen, Kenny’s Burger Joint and Kenny’s Smoke House)

Mama Foo’s Meatballs 

  • 1 LB Ground Beef
  • 3 TBS Yellow Onion Pureed
  • 2 TSP Garlic Freshly Pureed
  • 1 TBS Picked Ginger Pureed
  • ½ OZ Cilantro (chopped fine)
  • 2 TSP Chicken Base
  • 2 TBS Orange Juice
  • 2 TSP Cornstarch (dissolved in O.J.)
  • 1-1/2 TBS Sesame Oil
  • 2 TSP Soy Sauce
  • 1 TBS Siracha
  • 2 EA Eggs (large)
  • 1/3 Cup Panko                 

Dissolve cornstarch in orange juice. Combine all ingredients. Mix well. Refrigerate for one hour to let mixture set up. Form into 2 oz balls. Place on parchment-lined sheet tray. Bake in conventional oven at 325 degrees or regular oven 350 for 17 minutes. High fan for 15 minutes until brown and firm. Heat up hoison barbecue sauce (2 cups hoison sauce, 1-1/2 cups rice wine vinegar, 1/2 cup pure dark sesame oil) slowly until hot. Place meatballs in sauce and let sit in sauce for at least 10 minutes before serving. Drizzle with sriracha aioli (1/2 cup mayo, 1 tbs sriracha hot pepper sauce,1/2 tsp lemon juice) and serve. 

Buttermilk Popcorn Chicken

Ingredients:

  • 2 ea 6 oz chicken breasts cut into 7 pieces or cubes each
  • 2 cup white all-purpose flour
  • 2 cups buttermilk
  • 1 teaspoon LoSalt
  • 1 teaspoon white pepper
  • 1 Tablespoon porcini powder
  • 1 Tablespoon garlic powder
  • 1Tablespoon onion powder

Soak chicken in buttermilk four hours. Dredge in seasoned flour and repeat with buttermilk and flour mixture, coating twice. Cook in fryer at 350 degrees until golden brown and cooked through.  Serve with your favorite dipping sauces. Serves four people. Created originally by Chef John Brand.

Raspberry Lemonade Cocktail by Cascade Ice

  • 2 oz. Triple Sec
  • 2 oz. Limoncello
  • 1 handful raspberries
  • Juice of two lemons
  • ½ cup Cascade Ice Black Raspberry
  • Pinch of raw sugar

This is a great drink to have with a group of friends – it’s a party pleaser! Combine the fresh raspberries and raw sugar in the bottom of a glass. Muddle together until it has the appearance of jam. Add the Triple Sec, Limoncello and lemon juice. Add ice to the glass. Top it off with the Cascade Ice Black Raspberry. Stir well and enjoy!

Partida Tequila’s Skinny Margarita

Made from 100% blue agave grown in the heart of the Tequila Valley, Partida Tequila’s Skinny Margarita is a simple yet delicious cocktail that is perfect for parties and entertaining. This 160-calorie concoction will pair perfecting with a game day spread.

Skinny Partida Margarita

  • 1 ½ oz Partida Blanco Tequila
  • 1 oz Fresh squeezed lime juice
  • ¾ oz Agave Nectar
  • ¾ oz Water

Shake all ingredients with ice in a shaker. Strain over fresh ice into a Margarita glass or Old-Fashioned glass.
