As someone always on the go, usually opting for precooked lunches at the office or a quick drive-through run on the way home, I was intrigued by Camilla V. Saulsbury’s 250 Best Meals in a Mug. I would much rather prepare my own food, and this cookbook has great options for making meals while pressed for time. Saulsbury created easy, delicious, single-serve recipes that can be cooked in the microwave in just minutes. The variety is impressive – everything from soups, dips, desserts and pastas all in a coffee mug.

She gives the readers tips with each recipe, including ways to store leftover ingredients and optional garnishes. I found there’s also room for my own creativity. For example, I made the Apple Pancake Puff with whole wheat pancake mix instead of the listed buttermilk pancake mix which made for a sweet and filling way to start the day. Saulsbury also includes prep ahead instructions for every recipe, which I know those who take their lunch to-go will appreciate.

Most recipes list ingredients you probably already have in your pantry. The author also lists commonly used ingredients at the beginning of the book so you’ll be prepared to whip up almost any of the meals in mugs. Many ingredients are repeated throughout the book so some simple meal planning will help you use groceries efficiently.

This cookbook gave me the opportunity to make meals I never would have attempted, such as egg drop soup and Tex-Mex migas.

I have to admit, I made the sugar cookie in a mug several different times. If you really want to indulge, I recommend adding a scoop of ice cream in. The dessert recipes are the perfect size for one person and a delicious treat for your sweet tooth.

Another repeated meal was Saulsbury’s Peanut Noodles. I don’t think I’ll ever have to buy another premade Thai inspired noodle dish after learning this recipe featuring teriyaki sauce and peanut butter.

I will continue to reference and explore these mug recipes for hearty snacks, quick breakfasts and desserts for one. I recommend 250 Best Meals in a Mug for a college student with limited kitchen access or anyone who often takes meals to-go.
